150 years of handcrafted sparkling wine tradition, combined with a keen sense for contemporary innovation, have resulted in the creation of fine sparkling wines with "NiVaux" in the small, fine Rheingau manufactory. Founded as a champagne house in 1868, Schloss VAUX still preserves its tradition of maturing all sparkling wines on the lees in the original bottle using the traditional method of classic bottle fermentation.
